Speaking Of...

...that one time....3 days ago, when I said that I didn't like to do posts solely on food?? Well, yeah, here goes another one, haha! 


Althoughh, this may be a tad different because..
   A) these are somewhat homemade 
   B) I didn't use prepackaged food and
   C) I didn't follow a specific recipe


Mushroom Ricotta Pizza (adapted from Fitness Magazine)
   -flatbread
   -mushrooms (I used white because they were on sale)
   -basil and oregano
   -ricotta cheese
   -gorgonzola cheese
   -small drizzle of olive oil
I simply drizzled some olive oil, basil and oregano on the flatbread, threw it in the oven for a few minutes to get it somewhat crispy, added some ricotta, sliced mushrooms and sprinkles of gorgonzola, threw it in the oven for about 8 minutes, finished off with a little broil action and voila:

...paired with a delicious fresh salad and you've got yourself a perfect, quick and refreshing summer dinner!


Chicken, Mushroom and Swiss Quesadilla
   -tortilla or wrap
   -chicken
   -mushrooms
   -swiss cheese
   -gorgonzola cheese
This is was thrown-together mash of things I had in the apartment and didn't require a trip to the store. 
So, all I did was cut up chicken into small pieces, threw them in a frying pan with a little bit of cooking spray oil and tossed in some pepper, basil and garlic salt, once they were cooked, I threw in some mushrooms and allowed them to saute. Meanwhile, I jazzed up my tortilla with a little spinach hummus, swiss and a little gorgonzola cheese and eventually threw on the chicken and shroom mess - folded tortilla over, threw on frying pan, flipped once or twice and proceeded to enjoy:

This was good, however, next time, I would omit the hummus (became too runny) and use plain ole spinach instead.... most likely sauteed along with my mushrooms. 


They're both kind of the same meal but when you make next to nothing and drive 30 minutes each week to work, sometimes ya gotta do with what ya have!
